Elderflower cordial
This year I have tried it. Last year I missed the elderflowers because I was in Denmark so this year I promised myself I would do it. Here is the recipe I used from {self sufficient}.
– 20 Elderflower heads
– 1Sliced lemon (I have actually used 2 because I wasn’t concentrating! I’ll let you know if that’s ok)
– 1.5kg of Sugar
– 2tsp Citric Acid (a small box cost me £1.15 from the chemist)
– 1.2lts Boiling water
· Put all the ingredients in a bucket and add boiling water.
· Cover with a cloth, the recipe recommended a pillow case.
· Stir twice a day for 5 days
· Strain through a cloth into sterile bottles and then it will last for 2-3 weeks or you can freeze it. I think I am going to try to freeze it into Ice Cube trays so that each cube is one portion.
As I haven’t finished yet I will let you know how it works out.
I am also hoping to try Elderflower Champagne, I don’t know if its alcoholic but I hope it is at least fizzy.
Here is the recipe I found for Elderflower Champagne (same source as above)
· 8 litres of water
· 1.25kg of Sugar
· 8 large Elderflower Heads
· 4 Lemons
· 4 tbls mild white wine vinegar
· Boil water and dissolve sugar into it.
· Cool and add flowers, juice of 2 lemons, slices of the other 2 lemons and the vinegar
· Cover and leave for a day
· Strain through muslin and squeeze flowers for extra flavour.
· Store in screw top bottles and should be ready in 10 to 14 Days. Use within a monthI’ll let you know how it works out.
